ST. PATRICK'S DAY - RAINBOW DONUTS
Rainbow food is everywhere! But, Rainbow donuts with coconut clouds are probably the best thing ever & absolutely perfect for St. Patricks Day! I am sure you will be finding gold at the end of these Rainbows! Let's get our supplies together for the best St. Patty's Day breakfast.....don't forget the Coffee!
You'll need:
Donuts!
Knife
Rainbow Colored Sprinkles
For the Icing:
1/2 cup Butter
2 cups Powdered Sugar
1/4 cup Milk
1/4 tsp. Vanilla Extract

I used my very favorite donut, the "old fashioned" from Dunkin' Donuts. The flavor of this donut is perfect! And, what's easier then running down the street and grabbing a half dozen of these babies!
Next, we will need to help them with their rainbow shapes by cutting them in half.
Now for the Icing! Let the butter come to room temperature. With an electric mixer, whip the butter on high speed until smooth. Slowly add in the 2 cups of powdered sugar mixing well. Mix in extract & start adding milk in 1 TBSP increments until desired consistency.
Now for the fun! Have your sprinkles ready and in their rainbow pattern. I used Red, Orange, Yellow, Green, Blue & Purple colored sugar sprinkles. Add a small amount of icing to piping bag or zip lock and cut off a tiny piece of the corner. Pipe your first line around the back of the donut and follow immediately with red sprinkles. Continue piping a strip of icing and following with the appropriate sprinkles.
Pro Tip: Pour each color of sugar over a paper plate or parchment paper and shake off excess from donut. Use a different plate or piece of parchment paper for each color. Pour excess sprinkles back into containers when finished.
Don't forget the coconut clouds! After all rainbows are complete, pipe a small amount of icing in the shape of a cloud on the bottom of your rainbows. Sprinkle with coconut and enjoy!
